Program Description

The Food Safety and Defense Certificate graduate program is for food safety analysts, quality control specialists, production managers, food safety engineers, food inspectors, food microbiologists, and graduate students studying food safety and defense. The program addresses the advanced educational needs of individuals working in food production, quality assurance, regulatory affairs, and food analysis. The 12 credit certificate program may be completed entirely online or by combining residence and distance courses.


Program Requirements

Coursework
The Food Safety and Defense Certificate program requirements include 12 hours total of graduate coursework, including:

Core Courses

  • FDST 871—A Multidisciplinary Overview of Food Safety and Security (2 Credit Hours)
  • FDST 805—Food Microbiology (3 Credit Hours)
  • FDST 872—Principles ofthe Hazard Analysis and Critical Control Point System (HACCP) (2 Credit Hours)
  • FDST 873—Foodborne Toxicants (2 Credit Hours)

Elective Courses

  • FDST 874—Food Laws and the Regulatory Process (2 Credit Hours)
  • FDST 877—Topics in Food Science-Advanced Food Microbiology & Biotechnology (2 Credit Hours)
  • FDST 855—Microbiology of Fermented Foods (2 Credit Hours)
  • FDST 876—Risk Assessment for Food, Agriculture and Veterinary Medicine (3 Credit Hours)
